Ingredients:
2. Add rice and cook for 5 minutes stirring occasionally until slightly brown.
3. Add red kidney beans, thyme, chive, salt, and pepper and cook for 2 minutes more.
4. Stir in coconut milk and bring to a boil.
5. Lower heat, cover, and simmer for 35-40 minutes or until rice is tender and liquid is absorbed. Add more liquid if needed.
6. Adjust seasoning if needed, and serve.
