Ingredients:
2 large Eggplants, baked, uncovered
2 Tbsp Tahini Sauce
1 small Grenn Pepper, chopped
1 large Tomato, chopped
1 tsp Salt, to taste
1 Tbsp Vinegar Or Lemon, for zest
1 Tbsp Parsley Or Cilantro, chopped
1 Tbsp Vegetable Or Olive Oil
1 Tbsp Garlic Or Garlic Powder, finely chopped
Directions:
1. Wash the eggplants and then place in a baking tray.
2. Put to bake in the oven for a half hour.
3. While waiting for the eggplant to bake, chop green pepper, tomato, and
parsley.
4. Once eggplant is baked you can easily peel the skin off. Throw the skin
out and save the inside of the eggplant by placing it in a large bowl.
5. Add all of the remaining ingredients to the bowl with the eggplant.
6. Mix together all ingredients using a fork.
7. Chill and serve!
Tip:
Best served with Pita bread or Pita chips. Can be placed in sandwiches also.
