Safia's Fettah Recipe




Ingredients:
1 pound Lamb Loin Chop
1 ½ cubes Maggie
2 cups Waterfor boiling
1 Tomatochopped
2 Onionschopped
1 tsp Cumin
2 tsps Salt And Pepper
¼ cup Vinegar
1 package Pita Bread
2 cups Rice
1 Tbsp Garlicfinely chopped
2 Tbsp Butter
2 Tbsp Tomato Paste
1 can Tomato Sauce
3 Tbsp Samna Baladee, Ghee


Directions:
1.  Make the lamb into a soup by adding water, 1 tsp of salt and pepper, tomato and lots of onion.
2.  Add one cube of Maggie to the broth.
3.  While that is boiling, dry out the pita bread in the oven so that it is crunchy but not burnt.
4.  Make rice as normal with 2 cups of rice and 1 cup of water and put aside.
5.  For the sauce, fry some garlic in the butter in a cooking pot until it starts to brown.  Take off the stove and add ¼ cup of vinegar and stir.

6.  Place back over low heat and add 1 can of tomato sauce and 2 tbs of tomato paste to the garlic and butter mixture.
7.  Then add the remaining salt, pepper, and cumin.
8.  Use some of the lamb broth to create a sauce instead of adding water.
9.  After the soup has been made, take out the cubes of meat and pan fry in some samna baladee.


Putting the Fet'tah together:
1.  Crush pieces of dried bread and place in a large serving tray. 

2.  Pour some soup over the bread to dampen it and make it softer.
3.  Pour all of the rice over top the bread and soup.
4.  Place pieces of meat over the rice and then pour tomato sauce over top.

Tip: Some people do not put the pieces of meat on top and keep it separate. Safia puts it all together!

Safia's Turkey Recipe

Ingredients: 1 15 pound Turkey, I like to buy the ones that have a self timer in them 2 large White Onions, grated or chopped finely in a food processor 1⁄4 cup Salt 1⁄4 cup Pepper 1⁄4 cup Extra-Virgin Olive Oil Or Vegetable Oil 6 medium Potatoes, peeled and cut into large chunks (do not do this until 2 hours before the turkey is done) 1 large Foil Tray With Metal Handles 1 package Reynold's Foil Paper 1 Turkey Baster Directions: 1. Defrost the turkey by placing it in the refridgerator two nights before you have to cook it. 2.
