Ingredients:
1 2kg Prime Rib, whole
6 cloves Garlic, peeled
Montreal Steak Spice
Lemon And Pepper Spice
Roasted Garlic Spice
Worcestshire Spices
Barbeque Sause
4 large Potatoes, quarters
Directions:
1. If frozen, defrost overnight
2. Pre-heat oven to 325 degrees on convection, or 375 degrees for a regular oven
3. With a sharp knife, stab roast all over on both sides
4. Cut up garlic cloves into small chunks and push them into holes in roast
5. In a bow, mix spices: Montreal steak spices, lemon and pepper spice, roasted garlic spice, Worcestershire spices (Lea and Perrins), and barbeque sauce - no salt necessary
6. Pour spice mix on top of roast, rub in with hands, flip and pour onto other side
7. Optional: cut 4 potatoes into small pieces and put next to roast
8. Cover roast with foil
9. For medium well roast, cook for 2 hours or for medium rare cook for 1 hour
10. Remove foil half way through cooking time to allow for colour
